Ingredients & Equipment Making Ricotta Cheese
1x 9 liter saucepan
1 wooden spoon
Measuring cup
A spider (large scoop with holes)
A conical strainer
a large piece of cheese cloth
5 liters (1.3 gallons) of cold water
8 cups of whole milk powder
1/4 to 1/3 a cup of lemon juice or white vinegar
Salt and pepper
Step 1 Pour 5 liters (1.3 gallons) of water into pot. Measure and mix in the milk powder. Use a whisk to ensure you don't leave any lumps. Bring temperature to 85C (185F). Add the acid (either vinegar or lemon juice).
Stir very gently for about 1 minute so as to encourage the curds and whey to separate.Remove from heat and set aside for around 15-20 minutes.
Step 2 Meanwhile, arrange your conical strainer and cheese cloth in the kitchen sink. When the curds and whey have separated, gently scoop curds into the cheese cloth. Allow to cool for approx 15 minutes before placing into the refrigerator, or use straight away.
Chefs Notes:
Point ONE: When making ricotta cheese, using milk powder will save you heaps.
Point TWO: While the milk is coming to the heat, be sure to give it a stir now and again so as to avoid the milk catching on the base of the pot.
Point THREE: Nothing worse than bland and tasteless homemade ricotta cheese. Don't forget to add salt and pepper!
